
Last week I tried two new recipes Mexican Chicken and Tomato Herb Pasta, which I served together with garlic cheese biscuits. That was a great meal. I highly recommend them.
After seeing calzones on someone else's menu plan, I changed my plans last week and made calzones instead of Homemade Pizza. I followed Erin's (at $5 Dinners) directions for Pepperoni Calzones but used my usual no-rise pizza crust recipe since I don't have a bread machine.
This week since we have plans with family for Easter, I won't have to cook Friday or Saturday. WhooHoo! To make it easier, we're having leftovers on Thursday because we have a Maundy Thursday service at our church that night.
I'm trying to learn to plan my menu based on what I already have in the pantry and freezer. Here's what I ended up with:
Monday: Tacos, Spanish rice, tortilla chips, cheese sauce.
Tuesday: Chicken pot pie with cheesy biscuit topping.
Wednesday: Baked pork chops, black-eyed peas, macaroni and cheese, and corn bread.
Thursday: Leftover Chicken Spaghetti, salad, and French bread.
Sunday: Grilled cheese and tomato soup or leftovers.
I still have a few leftovers in the freezer for lunches this week. Beyond leftovers, I plan to fix:
Turkey BLT Wraps
Philly Cheesesteak Sandwiches
Brown bag burritos
I also plan to try this new muffin recipe for breakfast one morning:
Oatmeal Tea Muffins.
