Menu Plan Monday

I had a written meal plan last week, I just didn't take the time to post it. My son didn't feel well and needed lots and lots of attention, including in the middle of the night. This week, my husband is going to be working late so I've planned meals that can be prepared at our regular supper time for Ben and me, but then easily reheated when John gets home.

Notice that there are no chicken thighs on this week's menu. I got a really good deal on them last week (.59 cents a lb) and then served them too many times (3). By the third meal, we all kind of gagged at the sight.

Monday: Shepherd's Pie, green beans, and rolls.

Tuesday: Lasagna, salad, and homemade French bread.

Wednesday: Red beans & rice and corn bread.

Thursday: Chicken Spaghetti, salad, and French bread.

Friday: Chicken Enchiladas and refried beans.

Saturday: Hamburgers and French fries.

Sunday: Leftovers.

This week because of his unusual work hours, John will be eating breakfast at home instead of lunch.

My breakfast plans for this week are:
Cinnamon struesel coffee cake and oatmeal.
Biscuits, grits, and sausage. (I'll freeze half the uncooked biscuits and cook them Sunday morning.)
Waffles and bacon.
Overnight Cinnamon Rolls and oatmeal.
Banana bread and cereal.

Boy we are eating alot of the same things this week. We had Chicken Spaghetti on Saturday,Red beans and rice Monday, and Having Chicken Enchiladas on Friday. Funny.
