
This afternoon my nearly two-year-old son and I made sugar cookies for Valentine's Day, hearts, of course, plus some puppy dogs and moons for fun. We both had a good time and didn't make too big of a mess.
I've never made cut-out cookies before and was impressed with how well they turned out. I had planned to buy a package of sugar cookie mix at the grocery store this week, but they were sold out. Last night I went online and found a recipe to make them from scratch. I halved the recipe and based on some reviews added more sugar and vanilla. Below is the recipe I used and a link to the original recipe.
Rolled Sugar Cookies
Ingredients:
3/4 cup butter, softened
1 1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Directions:
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven. Cool completely.
