Menu Plan Monday

I am trying new recipes Tuesday and Thursday. I haven't decided exactly which recipe I'm using on Tuesday. I just know that I have some cube steak that I plan to fry. I've looked online and there are lots of options. I'll decide sometime tomorrow. I have a ham bone in the freezer leftover from the Crockpot Maple Ham I fixed a couple of weeks ago. I wanted to find a use for it so I'm using a potato soup recipe on Thursday that calls for a ham bone to make the stock. I'm also going to try to make bread bowls.

Monday: Leftover ham, black-eyed peas, mac & cheese, and corn bread.

Tuesday: Fried cube steak, mashed potatoes, corn, rolls.

Wednesday: Potluck at church. I'm taking hashbrown casserole and brownies.

Thursday: Cheesy Creamy Ham and Potato Soup in homemade bread bowls.

Friday: Chicken Enchiladas and refried beans.

Saturday: Hamburgers and chips.

Sunday: grilled cheese and tomato soup or leftovers.

My husband comes home for lunch most days. I plan five lunches, but don't designate a day for them. Last week he didn't feel well and was craving cool dishes with lettuce and tomatoes. I substituted this Doritoes Taco Salad recipe for the bean quesadillas I had planned to fix. He really enjoyed it. Since I didn't have any taco seasoning for this last minute substitution I went online and found this taco seasoning recipe. It worked well and I had everything in my spice cabinet. Next time I will decrease the amount of chili powder, though.

Lunches:
bean quesadillas (carry over from last week)
HB Helper (been carrying over for several weeks)
frozen pizza
tuna mac & cheese casserole
sloppy joes
