Last week's Crockpot Maple Ham was a great success. Since the ham was more expensive than what I would usually spend on a single meal, I was happy that there were plenty of leftovers that I froze for later. Planning to eat at church has been a bust for me lately. Thankfully I had a backup plan for Friday night. John came home exhaused Friday from a crazy long week that ended with several inches of snow that threw everyone into panic mode. Saturday and Sunday he felt terrible and spent both days on the couch and had very little appetite. This week we are planning to eat at church Wednesday night, but if something happens I know I have leftover ham and a bag of frozen black-eyed peas that can be substituted. Ben and I are going to be travelling to visit my family this weekend so that leaves John eating a variety of frozen pizzas, Hot Pockets, etc.Monday: Shepherd's Pie, green beans, rolls.
Tuesday: Chicken and Sausage Creole over rice, homemade French bread.
Wednesday: Eating at church.
Thursday: Baked Teriyaki Chicken, lo mein, salad, egg rolls.
Friday and Saturday: John left with frozen food.
Sunday: Tomato soup and grilled cheese sandwiches.
Here are our lunches in no particular order. Friday, Ben and I will be on the road so we'll all just have to pick something up. Some are carrryovers from last week that didn't get eaten.
Bean Quesadillas
BLTs
Fried Chicken wraps
Hamburger Helper

Your chicken and sausage creole sounds really good. Looks like a good week of eating at your house. Have a great week!
